Castello di Bibbione farmlands extend over 100 hectares (approx. 200 acres) which are cultivated with vineyards, olive groves, and some other crops.

The farm is member of the co-operative Castelli del Grevepesa since 1965, to whom it sends the grapes which are transformed into wine.

Grapes: Sangiovese
Harvest: hand picked bunches in small cases
Vinification: fermentation at controlled temperature of 27 C with 10 days maceration on the skins
Ageing: 18/24 months in Slavonian oak casks
Bottle fining: 3 months minimum
Colour: ruby red
Perfume: intense, vivacious, with hints of ripe fruit
Taste: elegant, full bodied and soft velvet on the palate
Serving temperature: 20
Serve with: grilled red meats,game meat, hard cheeses

Grapes: Sangiovese
Harvest: hand picked bunches in small cases
Vinification: fermentation at controlled temperature of 30 C with 12 days maceration on the skins
Aging: 10/12 months in Slavonian oak casks
Bottle fining: one month minimum
Colour: intense ruby red
Perfume: elegant, fragrant, delicate
Taste: full and balanced, slightly sapid
Serving temperature: 20
Serve with: all red meats, game meats, medium ripe cheeses

IGT Toscana

Grapes: mainly Sangiovese with canaiolo, trebbiano, and Malvasia
Harvest: hand picked bunches in small cases
Vinification: fermentation at controlled temperature of 28 C with 8 days maceration on the skins
Ageing: in tanks
Bottle fining: not foreseen
Colour: intense ruby red
Perfume: fresh fruity wine fragrance
Taste: pleasant, medium body, vivacious
Serving temperature: 18
Serve with: stewed meats, spicy salame and crostini

Vinsanto del Chianti Classico
 

Harvest: hand picked bunches in small cases
Colour: golden yellow with amber highlights
Perfume: ehtereal, intense, and elegant
Serving temperature: 12 C for aperitive, 18 C for dessert
Serve with: almond biscuits (Cantuccini di Prato), spicy cheeses

 

 

 

Olio Extra Vergine d'Oliva Marchesi Rangoni Machiavelli

Derived from hand-picked olives, this oil has a very characteristic scent, maintains its vivid colour, and, more important, its taste, typical of the Tuscan olives.
